  • 4 oz (120g) cooked ham, thinly sliced
  • A pinch of salt (be careful not to overdo it, especially if your cheese is salty)

Instructions:

  1. Prepare the zucchini base. In a large bowl, whisk the eggs. Grate the zucchini using a box grater and squeeze out any excess water. Add the grated zucchini and hard cheese to the eggs and mix well. Season with a pinch of salt.
  2. Bake the roll-up. Line a baking sheet (approximately 8×12 inches or 20×30 cm) with parchment paper. Pour the zucchini mixture onto the paper, spreading it into an even layer. Bake at 350°F (180°C) for 20-30 minutes, or until the base is lightly browned and cooked through.
  3. Assemble the roll-up. Let the baked base cool completely. Spread the cream cheese evenly over the top, then arrange the ham slices on top of the cheese. Carefully and tightly roll the zucchini base into a log.
  4. Serve. Slice the roll-up into individual portions. Garnish with fresh herbs like parsley or dill for a vibrant finish, and serve!
