Zucchini Pancakes

Let’s make some delicious zucchini pancakes!

Ingredients:

  • 450g zucchini, grated
  • 300ml kefir
  • 4 eggs
  • 350g flour
  • 1 tbsp sunflower oil
  • 2 tbsp parsley, chopped
  • 1 tsp salt
  • 1/2 tsp baking soda
  • Butter, for greasing the pan

Instructions:

  1. Grate the zucchini and squeeze out the excess liquid.
  2. Add the beaten eggs, salt, kefir, and parsley. Mix well.
  3. Gradually add the flour and mix until you have a smooth batter. Stir in the sunflower oil and baking soda. Let the batter rest for 20 minutes.
  4. Heat a frying pan and grease it with butter. Pour a ladleful of batter into the pan and cook until golden brown on both sides.

Serve hot zucchini pancakes with butter. Enjoy!
