Let’s make some delicious zucchini pancakes!
Ingredients:
- 450g zucchini, grated
- 300ml kefir
- 4 eggs
- 350g flour
- 1 tbsp sunflower oil
- 2 tbsp parsley, chopped
- 1 tsp salt
- 1/2 tsp baking soda
- Butter, for greasing the pan
Instructions:
- Grate the zucchini and squeeze out the excess liquid.
- Add the beaten eggs, salt, kefir, and parsley. Mix well.
- Gradually add the flour and mix until you have a smooth batter. Stir in the sunflower oil and baking soda. Let the batter rest for 20 minutes.
- Heat a frying pan and grease it with butter. Pour a ladleful of batter into the pan and cook until golden brown on both sides.
Serve hot zucchini pancakes with butter. Enjoy!
