Let’s prepare a delicious Zander Fish Soup with Beans.
Ingredients:
- 500g Zander fillet (pike perch)
- 1-2 potatoes
- 1 carrot
- 1 onion
- 1 clove garlic
- 1 cup dried beans (soaked overnight)
- 20g (handful) dried white mushrooms (soaked in boiling water for 2 hours)
- Fresh herbs for garnish
- Bay leaf, black peppercorns
Instructions:
- Drain the soaked beans and add them to a pot of boiling water. Cover and simmer over low heat until the beans are tender (approximately 2 hours).
- While the beans are cooking, prepare the sauté. You will need a couple of medium-sized potatoes, 1 carrot, 1 onion, drained mushrooms (reserve the soaking liquid), 1 clove garlic, and a piece of pike perch (zander) fillet.
- Remove the bones from the fish (spine and ribs) and cut the fillet into 2×2 cm pieces.
- Grate the carrot on a coarse grater, finely chop the onion, and chop the mushrooms. Sauté the onion. Add the mushrooms to the onion and sauté until slightly browned. Squeeze the garlic into the pan.
- Stir, add the carrots, and sauté briefly. Pour in the mushroom soaking liquid.
- Salt and pepper to taste. Simmer, covered, for about 20 minutes.
- When the beans are soft, add the diced potatoes and the sautéed vegetables. Cook the potatoes until they are almost tender. Now add the pike perch (zander) and simmer, covered, until the potatoes are fully cooked. Taste and adjust the seasoning with salt and pepper.
- Garnish with fresh herbs.
