Let’s make a fun and colorful Watermelon Slice Salad!
Ingredients:
- Cooked chicken breast – 400g
- Eggs – 3-4
- Hard cheese – 150-200g
- Fresh tomatoes – 2
- Fresh cucumbers – 2
- Onion – 1
- Olives (for garnish)
- Mayonnaise
Instructions:
- Marinate the onion: Slice the onion. Combine ½ cup of water, 1 teaspoon of sugar, and 2 teaspoons of vinegar in a bowl. Add the sliced onion and let it marinate for 15-20 minutes.
- Prepare the other ingredients: Boil the chicken breast and eggs until cooked. Grate the hard cheese.
- Assemble the salad: Dice the cooked chicken. On a serving platter, create a crescent shape with the chicken and spread a layer of mayonnaise.
- Add the layers: Top the chicken with the marinated onion, leaving a small gap on the inner side. Spread a thin layer of mayonnaise. Grate the egg over the onion, leaving a small gap as well. Spread mayonnaise.
- Create the crust: Grate the hard cheese and spread it over the egg, covering the entire surface. Sprinkle additional cheese along the edge to form the “rind” of the watermelon.
- Add the flesh: Grate the cucumber, salt it, and squeeze out any excess liquid. Dice the tomatoes and remove the seeds. Spread the tomatoes over the cheese layer to represent the watermelon flesh. Place the grated cucumber on the side to mimic the green rind.
- Garnish: Cut olives into slices to resemble watermelon seeds. Decorate the salad with the olive slices.
