Warm Chicken Liver Salad

This warm chicken liver salad is a quick and flavorful dish that’s perfect for a light meal or as a side.

Ingredients:

  • 200 grams cleaned chicken livers
  • 100 grams cherry tomatoes
  • 1 bunch of arugula
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon balsamic vinegar
  • 10 grams pumpkin seeds
  • Oil for frying

Instructions:

  1. Clean the chicken livers and remove any veins.
  2. Heat a skillet with a little oil. Cook the chicken livers over medium heat for 5-7 minutes or until cooked through. Season with salt during the last minute of cooking. Be careful not to overcook, as the livers can become dry.
  3. Arrange the arugula, cooked chicken livers, and halved cherry tomatoes on a plate.
  4. Prepare the dressing by whisking together lemon juice, olive oil, and balsamic vinegar. Drizzle over the salad.
  5. Sprinkle with pumpkin seeds and serve immediately.
