We invite you to prepare a delicious Vegetable Omelette with Spinach.
Ingredients:
- 1/2 head of cauliflower
- 4 slices of yellow zucchini
- 3 large eggs
- 3–4 tablespoons of heavy cream (or sour cream)
- 1 stalk of celery
- 1 shallot or green onion
- 2 handfuls of fresh spinach leaves
- 8–10 small cherry tomatoes
- 10 grams of spicy hard cheese
- 1 clove of garlic
- 1 tablespoon of dried Provence herbs
- 1/2 teaspoon of ground turmeric
- A pinch of sweet paprika
- Sea salt
- Spices (to taste)
- Cooking oil
Preparation:
- Prepare the Vegetables:
- Wash and pat dry the cauliflower, then grate the florets using a fine grater.
- Wash the zucchini and cut it into small cubes.
- Wash the celery, remove the tough fibers, and grate it as well.
- Peel and finely chop the shallot. Crush the garlic clove using a press.
- Prepare the Egg Mixture:
- In a bowl, beat the eggs together with the cream (or sour cream) until fluffy.
- Grate the cheese finely. Add the prepared vegetables and half of the grated cheese to the egg mixture.
- Season the mixture with Provence herbs, turmeric, paprika, sea salt, and spices to taste.
- Cook the Omelette:
- Heat 1 tablespoon of cooking oil in a skillet.
- Pour in the egg and vegetable mixture. Cook for 1–2 minutes on each side until firm.
- Add Spinach and Tomatoes:
- Wash the spinach leaves and cherry tomatoes. Halve the tomatoes.
- Arrange the spinach and tomatoes on top of the omelette, then sprinkle with the remaining grated cheese.
- Cover the skillet with a lid and cook until the cheese melts.
