Turkish Kisir Salad

We suggest you prepare Turkish Kisir Salad – a delicious salad that combines wholesome vegetables with Mediterranean flavors. Its base is bulgur, which beautifully absorbs the flavors of spices and sauces, making the dish exceptionally appetizing.

Ingredients:

  • 4 cups fine bulgur
  • 4 cups hot water
  • 1 tablespoon hot pepper paste
  • 1 tablespoon tomato paste
  • ½ cup finely chopped cherry tomatoes
  • ½ cup fresh parsley
  • ½ cup green onions
  • ½ cup fresh mint
  • 8-9 lettuce leaves
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon ground cumin
  • Juice of 1 lemon
  • ⅓ cup pomegranate molasses
  • ⅓ cup olive oil

Instructions:

  1. Rinse the bulgur and let the excess water drain.
  2. Transfer the bulgur to a deep bowl, add the pepper paste, and mix thoroughly. Then, add the tomato paste and mix well again.
  3. Pour the hot water over the bulgur, cover with a lid, and let it sit for 20 minutes, allowing the grains to absorb all the liquid and become soft.
  4. While the bulgur is soaking, finely chop the parsley, green onions, mint, and lettuce leaves.
  5. Add the chopped cherry tomatoes, prepared herbs, black pepper, salt, cumin, lemon juice, pomegranate molasses, and olive oil to the prepared bulgur. Mix thoroughly to distribute all the ingredients evenly.
  6. Refrigerate the salad and serve it chilled.

Tip: Kisir can be garnished with fresh cucumbers, tomatoes, or pickled vegetables.
