We suggest you prepare Turkish Kisir Salad – a delicious salad that combines wholesome vegetables with Mediterranean flavors. Its base is bulgur, which beautifully absorbs the flavors of spices and sauces, making the dish exceptionally appetizing.
Ingredients:
- 4 cups fine bulgur
- 4 cups hot water
- 1 tablespoon hot pepper paste
- 1 tablespoon tomato paste
- ½ cup finely chopped cherry tomatoes
- ½ cup fresh parsley
- ½ cup green onions
- ½ cup fresh mint
- 8-9 lettuce leaves
- ½ teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon ground cumin
- Juice of 1 lemon
- ⅓ cup pomegranate molasses
- ⅓ cup olive oil
Instructions:
- Rinse the bulgur and let the excess water drain.
- Transfer the bulgur to a deep bowl, add the pepper paste, and mix thoroughly. Then, add the tomato paste and mix well again.
- Pour the hot water over the bulgur, cover with a lid, and let it sit for 20 minutes, allowing the grains to absorb all the liquid and become soft.
- While the bulgur is soaking, finely chop the parsley, green onions, mint, and lettuce leaves.
- Add the chopped cherry tomatoes, prepared herbs, black pepper, salt, cumin, lemon juice, pomegranate molasses, and olive oil to the prepared bulgur. Mix thoroughly to distribute all the ingredients evenly.
- Refrigerate the salad and serve it chilled.
Tip: Kisir can be garnished with fresh cucumbers, tomatoes, or pickled vegetables.
