Tomato Ketchup with chili and spices

We suggest making Tomato Ketchup with chili and spices.

Ingredients:

  • Tomatoes – 2.5 kg
  • 9% vinegar – 50 ml
  • Allspice (whole) – 5 pcs.
  • Cloves – 5 pcs.
  • Chili peppers – 2-3 pcs.
  • Cinnamon stick – 1 pc.
  • Onion – 1 bulb
  • Brown sugar – 1.5 tbsp
  • Sugar – 1.5 tbsp
  • Smoked paprika – 1 tbsp
  • Mustard – 1 tbsp
  • Garlic – 4 cloves
  • Salt

Preparation:

  1. Prepare the vegetables. Peel the onion, pepper, and tomatoes, then cut them into quarters. Place them into a food processor (with a blade attachment), add the chili peppers and garlic, and blend until smooth.
  2. Pour the mixture into a pot (make sure to use one with a thick bottom), and simmer for about 1 hour over medium heat. Then, strain the sauce through a sieve to remove seeds and skin pieces.
  3. Pour the mixture back into the pot, add mustard, paprika, both types of sugar, salt, and vinegar. Place the cinnamon stick, allspice, and cloves into a small piece of cheesecloth and submerge it into the sauce.
  4. Simmer for another hour, stirring constantly, and cover the pot with a lid. After that, remove the cheesecloth with the spices and pour the sauce into sterilized jars.
