Sweet Focaccia with Strawberries and Feta

We invite you to prepare a delicious Italian dish – Sweet Focaccia with Strawberries and Feta. This delightful treat pairs perfectly with tea or coffee. You’re going to love it!

Ingredients:

  • 3 1/4 cups all-purpose flour, plus 2-4 tbsp for dusting
  • 2 tsp instant yeast
  • 2 tsp salt
  • 1 1/2 cups very warm water (about 98°F / 37°C)
  • 3 tbsp olive oil, divided
  • 1/8-1/4 tsp sea salt
  • 1 1/2 cups sliced fresh strawberries
  • 1/2 cup crumbled feta cheese
  • 2-4 tbsp balsamic glaze

Instructions:

  1. In a large bowl, mix together the flour, yeast, and salt.
  2. Add warm water, ensuring it is very warm but not hot to the touch. Stir until all the flour is moistened. No dry bits should remain.
  3. Once fully combined, cover tightly with plastic wrap and let rise for 2 hours or until doubled in size.
  4. Prepare a baking pan by greasing it with 1 1/2 tbsp olive oil.
  5. Transfer the dough to the prepared pan and gently stretch it into a rectangle (about 10×14 inches / 25×35 cm). Lightly grease your hands with oil to prevent sticking.
  6. Brush the dough with the remaining 1 1/2 tbsp olive oil and press your fingers into it to create dimples while spreading it evenly. Sprinkle with sea salt.
  7. Cover with a clean towel and let rest for 45 minutes.
  8. Preheat the oven to 430°F (220°C).
  9. Once the dough has rested, uncover it and evenly distribute the sliced strawberries and crumbled feta on top. Place the pan into the preheated oven.
  10. Bake for 20-23 minutes or until golden brown.
  11. Let cool for a few minutes, then transfer the focaccia to a wire rack to cool further. Drizzle with balsamic glaze, slice into squares, and serve warm.

Leftovers can be stored in the refrigerator and enjoyed both reheated and chilled.
