Strawberry Mousse with Jelly and Mascarpone Cream

Ingredients:

Strawberry Mousse:

  • 400 g 30% cream
  • 80 g white chocolate
  • 200 g strawberries
  • 15 g gelatin
  • 60 g sugar
  • 2 strawberry jelly packets – for the second layer

Cream:

  • 150 g mascarpone cheese
  • 100 g cream
  • 40 g powdered sugar

Instructions:

  1. Soak the gelatin in a few tablespoons of cold water, adding just enough water to dissolve the gelatin. Set aside.
  2. Remove the stems from the strawberries, then mash and blend them into a smooth puree.
  3. Pour the cream into a saucepan and add the white chocolate. Then heat over low heat until the ingredients are melted. Add the previously dissolved gelatin to the warm cream and white chocolate mixture, and mix well to avoid any lumps. Then add the strawberry puree to the mixture. Stir and pour into the bottom of glasses. Refrigerate to set the mousse (about 2 hours).
  4. Prepare the jelly according to the package instructions, and set aside to cool. Then pour the jelly over the set mousse. This will create the second layer of the dessert. Refrigerate for another 2 hours.
  5. Whip the cream with the mascarpone cheese, then add the powdered sugar and whip lightly. The cream should be thick. Transfer the mixture to a pastry bag and pipe the cream onto the set jelly. Garnish the dessert with strawberries on top.
