We offer you a recipe for a Spicy Chicken and Bean Salad.
Ingredients:
- 2 x 400g cans of various beans, drained and rinsed
- 1 cup of fresh or frozen peas (pre-thawed)
- 1 small red onion, finely chopped
- ¼ cup of chopped green onions
- 2 red bell peppers, diced
- 4 tablespoons of vinaigrette mixture (3 tablespoons of vinegar and 1 tablespoon of oil)
- 500g skinless chicken breasts, diced
- 2 teaspoons of Cajun spice mix
- 3 slices of multigrain bread
- 4 tablespoons of low-fat yogurt
Preparation:
- In a large bowl, combine the beans, peas, red onion, green onion and bell pepper. Mix well to combine.
- Heat the oil in a large non-stick skillet. When hot, add the chicken and sprinkle with the spice mix. Fry until cooked, stirring occasionally.
- Toast the bread and cut it into squares to make croutons. Add to the chicken salad. Pour the vinaigrette mixture over the salad and distribute it on plates. You can add yogurt on top and sprinkle with an additional amount of green onions (to your taste).
