Savory Tart with Vegetables and Feta

We invite you to prepare a Savory Tart with Vegetables and Feta. This tart is made with spelt flour, which is rich in protein and an excellent source of B vitamins.

Ingredients:

  • 250 g spelt flour
  • 3 eggs
  • Approximately 60 g liquid coconut or olive oil
  • Water
  • 1 teaspoon baking powder
  • 300 g thick natural yogurt
  • 1 tablespoon mustard
  • 3 tablespoons curry powder
  • Less than 1 teaspoon pepper
  • A handful of arugula
  • Half an onion
  • 8 pieces of sun-dried tomatoes
  • Olives
  • Half a pack of semi-hard feta cheese
  • A few fresh basil leaves
  • A pinch of salt, spices

Preparation:

Preparing the tart base:

  1. On a board, combine the flour, salt, baking powder, and, if desired, your favorite dried herbs like thyme, rosemary, or Provençal herbs.
  2. Add one egg and oil, then knead the dough, gradually adding water until it reaches the desired consistency (the dough should be smooth but not too runny!). Refrigerate the dough for 20 minutes.
  3. Preheat the oven to 180°C (356°F).
  4. Take the dough out of the fridge and divide it into two unequal parts. Roll out the larger portion to form the tart base. Use the smaller portion to create the edges of the tart.
  5. Prick the entire base with a fork and bake in the preheated oven for 15 minutes.

Preparing the filling:

  • Meanwhile, wash the arugula, chop it finely, and let it dry.
  • Chop the onion, sun-dried tomatoes, and olives into small pieces.
  • In a deep bowl, mix yogurt, 2 eggs, curry powder, salt, pepper, and mustard using a blender or a spoon (make sure the eggs are thoroughly combined!) until you get a smooth yogurt mixture.

After 15 minutes, remove the tart base from the oven. Layer the sun-dried tomatoes, olives, and onion on the base. Crumble the feta cheese on top, then sprinkle with arugula and basil leaves. Pour the yogurt mixture evenly over the tart.

Bake the tart in the oven for approximately 30 minutes.
