  • Butter (melted) — ¼ cup (50 g)
  • Milk — ¼ cup (50 ml)
  • Salt and black pepper — to taste
  • Nutmeg — a pinch (optional, for extra warmth)
  • Chestnuts (pre-cooked or canned) — 1 cup (150 g)
  • Hard cheese (Comté, Gruyère, or sharp Cheddar) — 2 oz (50 g), grated

Instructions:

  1. Preheat & Prep Pumpkin: Preheat your oven to 350°F (180°C). Peel and cube your pumpkin (if using fresh). Steam it for 6–8 minutes until soft, then mash it into a puree. (If using canned puree, skip this step.)
  2. Mix the Wet Ingredients: In a large bowl, whisk the pumpkin puree with the eggs. Add the melted butter and milk.
  3. Combine Dry Ingredients: Sift the flour and baking powder over the wet ingredients. Mix everything until just combined. Be careful not to overmix.
  4. Season and Fold: Season the batter with salt, pepper, and a pinch of nutmeg. Roughly chop the chestnuts and fold them into the batter along with the grated cheese.
  5. Bake: Spoon the batter evenly into small silicone or paper-lined muffin tins.
