Salmon and Mushroom Quiche

Quiche is often associated with French cuisine, but its origins can be traced back to the German region of Lorraine. Traditionally, it was made with leftover ingredients and dough, but the French added cheese and refined the pastry. Today, quiche is a popular savory pastry enjoyed both hot and cold.

Ingredients:

For the pastry:

  • 1 egg
  • 30g cold unsalted butter
  • 120g flour (1 cup)
  • 0.1 tsp salt

For the filling:

  • 300g salmon fillet
  • 150g mushrooms
  • 1 sprig fresh dill (optional)

For the custard:

  • 100g cream cheese
  • 100ml cream
  • 2 eggs
  • Salt to taste

Instructions:

  1. Make the pastry: Cut the cold butter into small pieces and place in a bowl. Add the egg, salt, and flour. Use a pastry blender or your fingers to work the ingredients together until they resemble breadcrumbs.
  2. Form the pastry: On a lightly floured surface, quickly bring the dough together to form a ball. Be careful not to overwork the dough.
  3. Prepare the pastry case: Press the dough into a greased pie dish, forming a rim about 3 cm high.
  4. Preheat the oven to 180°C (350°F).
  5. Prepare the filling: Clean and roughly chop the mushrooms. Cut the salmon into large chunks.
  6. Make the custard: In a bowl, whisk together the eggs, cream, cream cheese, and salt.
  7. Assemble the quiche: Arrange the mushrooms and salmon in the pastry case. Sprinkle with chopped dill, if using. Pour the custard over the filling.
  8. Bake: Bake the quiche for 40-45 minutes, or until the pastry is golden brown and the custard is set.
  9. Cool and serve: Let the quiche cool slightly before slicing and serving.

Tips:

  • For a richer flavor, use a combination of mushrooms, such as cremini and shiitake.
