We suggest preparing a salad with sprats “Riga Fantasy.”
Ingredients:
- 500 g of potatoes
- 5 chicken eggs
- 200 g of carrots
- 200 g of pickled cucumbers
- 2 cans of sprats in oil
- Dill for garnish
- 50 g of hard cheese
- 100 g of caviar or caviar spread
- Salt to taste
Preparation:
- Take medium-sized potatoes, about 500 grams in total. Wash the potatoes thoroughly in warm water. Place the washed potatoes in a pot, cover with cold water, and bring to a boil.
- Boil the potatoes until fully cooked, approximately twenty minutes after the water starts boiling. Remove from heat, drain the water, and allow the potatoes to cool completely. Peel the cooled potatoes and grate them coarsely.
- Wash the carrots well, remove the leaves and trim the ends. Place them in a small pot, cover with cold water, and bring to a boil. Cook the carrots until they are easily pierced with a fork. Remove from heat, drain, and let them cool. Peel the carrots and cut them into small cubes.
- Drain the pickled cucumbers from the brine slightly and chop them into small cubes. Boil the eggs until hard, cool them, and grate finely. Take the sprats out of the can and place them on a paper towel to remove excess oil. Remove the tails and bones.
- In a salad bowl, layer the ingredients as follows: potatoes, carrots, sprats, eggs, potatoes, and cucumbers. Lightly spread some mayonnaise between the layers and add a little salt. Top with grated cheese, make a mayonnaise grid, and distribute small portions of caviar or caviar spread on top. Garnish with dill.
