“Royal” Vatrushka

We suggest making the dish “Royal” Vatrushka.


Ingredients:

  • 2 cups of wheat flour
  • 1 cup of sugar
  • 200 g of butter
  • 0.5 kg of cottage cheese
  • 3 eggs
  • A pinch of baking soda
  • 0.5 tsp of vanilla sugar

Instructions:

  1. First, chill the butter until it’s firm enough to grate easily on a coarse grater.
  2. Mix the butter with the flour, baking soda, and half of the sugar. Rub together with a fork until it forms a crumbly mixture.
  3. In a separate bowl, mix the cottage cheese (it’s best to use high-fat cottage cheese for a richer flavor) with the remaining sugar and eggs, lightly whisking the eggs. If the cottage cheese has lumps, it’s better to press it through a sieve for a smoother texture.
  4. Take a baking dish, grease it with butter, and evenly spread half of the crumb mixture as the base.
  5. Spread the cottage cheese mixture on top, smooth it out, and sprinkle with the remaining crumbs. Preheat the oven to 180-200°C and bake the vatrushka for about 30 minutes, or until golden brown.
