We suggest making the dish “Royal” Vatrushka.
Ingredients:
- 2 cups of wheat flour
- 1 cup of sugar
- 200 g of butter
- 0.5 kg of cottage cheese
- 3 eggs
- A pinch of baking soda
- 0.5 tsp of vanilla sugar
Instructions:
- First, chill the butter until it’s firm enough to grate easily on a coarse grater.
- Mix the butter with the flour, baking soda, and half of the sugar. Rub together with a fork until it forms a crumbly mixture.
- In a separate bowl, mix the cottage cheese (it’s best to use high-fat cottage cheese for a richer flavor) with the remaining sugar and eggs, lightly whisking the eggs. If the cottage cheese has lumps, it’s better to press it through a sieve for a smoother texture.
- Take a baking dish, grease it with butter, and evenly spread half of the crumb mixture as the base.
- Spread the cottage cheese mixture on top, smooth it out, and sprinkle with the remaining crumbs. Preheat the oven to 180-200°C and bake the vatrushka for about 30 minutes, or until golden brown.
