Roasted Turkey Soup

We offer you a recipe for Roasted Turkey Soup.

Ingredients:

  • 2 liters of unsalted chicken or turkey broth
  • 1 piece of roasted turkey fillet, cut into coarse pieces
  • 2 bay leaves
  • 2 sprigs of thyme
  • 250 g of bacon, diced (optional)
  • 1 large onion, finely chopped (about 1.5 cups)
  • 2 medium carrots, cut into medium cubes (about 1.5 cups)
  • 3 celery stalks, sliced (about 1.5 cups)
  • 500 g of various roasted turkey meat, coarsely cut into small pieces
  • Salt and freshly ground black pepper
  • 3 tablespoons of chopped fresh parsley leaves

Preparation:

  1. Combine the broth, turkey pieces, bay leaves and thyme sprigs in a large saucepan. Bring to a boil over high heat, reduce heat and simmer for 1 hour. Strain the broth into a medium saucepan and remove the meat to a separate bowl.
  2. Add bacon, onion, carrots and celery to the broth from which the meat was removed. Bring to a boil and cook until the vegetables are soft, about 10 minutes.
  3. Add the turkey meat from the bowl to the soup and season with salt and pepper to taste. Add parsley and serve.

Roasted Turkey Soup is ready. Enjoy your meal!

Notes: This soup can also be made with store-bought rotisserie chicken.
