We invite you to prepare Riga-Style Cottage Cheese Dessert.
Ingredients:
- 400 g cottage cheese (any fat content)
- 200 g sour cream (any fat content)
- 20 g gelatin
- 1 can of diced pineapple
- 0.5 L pineapple juice
- Vanilla
- 0.5 can of sweetened condensed milk (adjust sweetness to taste)
Instructions:
- Dissolve the gelatin in pineapple juice (allow it to soak for 40 minutes to 1 hour), and add the liquid from the canned pineapple to it.
- Blend the cottage cheese with sour cream, vanilla, and condensed milk (you can use a blender).
- Heat the soaked gelatin over low heat until fully dissolved (do not bring to a boil!), then mix it with the sour cream and cottage cheese mixture. Stir in the diced pineapple.
- Pour the dessert into molds and refrigerate. It will be ready to serve in a few hours.
