Riga-Style Cottage Cheese Dessert

We invite you to prepare Riga-Style Cottage Cheese Dessert.

Ingredients:

  • 400 g cottage cheese (any fat content)
  • 200 g sour cream (any fat content)
  • 20 g gelatin
  • 1 can of diced pineapple
  • 0.5 L pineapple juice
  • Vanilla
  • 0.5 can of sweetened condensed milk (adjust sweetness to taste)

Instructions:

  1. Dissolve the gelatin in pineapple juice (allow it to soak for 40 minutes to 1 hour), and add the liquid from the canned pineapple to it.
  2. Blend the cottage cheese with sour cream, vanilla, and condensed milk (you can use a blender).
  3. Heat the soaked gelatin over low heat until fully dissolved (do not bring to a boil!), then mix it with the sour cream and cottage cheese mixture. Stir in the diced pineapple.
  4. Pour the dessert into molds and refrigerate. It will be ready to serve in a few hours.
