- 2 kg quinces
- 2 kg sugar
Instructions:
- Prepare the quinces: Wash the quinces and cut them into quarters.
- Remove seeds: Remove the cores and seeds.
- Layer in jars: Place the quince slices in sterilized jars.
- Add sugar: Cover the quince with sugar.
- Let it sit: Place the jars in a cool place for 5 days.
- Mash and add sugar: Each day, gently mash the quinces in the jars to release the juice. Add more sugar if needed.
- Seal and store: After 5 days, seal the jars and refrigerate.
- Optional: Pasteurize: For longer storage, you can pasteurize the jars by boiling them in a pot of water for 12-15 minutes.
