We invite you to make a Quiche with Salmon. Quiche is an open French pie with a shortcrust pastry base, and it can be filled with various ingredients, from light vegetable, fruit, or herb fillings to hearty meat or mushroom ones.
Ingredients:
For the crust:
- Butter – 100 g
- Flour – 250 g
- Egg – 1
For the filling:
- Salmon – 400 g
- Hard cheese – 100 g
For the custard:
- Milk – 200 ml
- Eggs – 2
- Salt and pepper to taste
Preparation:
- Chop the frozen butter and sifted flour together into fine crumbs.
- Add the egg and knead into a dough.
- Roll out the dough slightly larger than the baking dish (to create an edge), then place it in the dish. Cover the dough with a sheet of parchment and fill with beans or peas. Bake at 180°C (350°F) for about 15 minutes to keep the dough from becoming soggy once the filling is added.
- Cut the salmon into medium-sized pieces and grate or dice the hard cheese. For the custard, beat the eggs with salt and pepper, add the milk, and mix well.
- Remove the crust from the oven (after 15 minutes), discard the parchment and beans, add the salmon, top with the cheese, then pour the custard over everything.
- Bake at 180°C (350°F) for about one hour. Remove the quiche from the dish and cut it into portions.
