Quiche with Salmon

We invite you to make a Quiche with Salmon. Quiche is an open French pie with a shortcrust pastry base, and it can be filled with various ingredients, from light vegetable, fruit, or herb fillings to hearty meat or mushroom ones.

Ingredients:

For the crust:

  • Butter – 100 g
  • Flour – 250 g
  • Egg – 1

For the filling:

  • Salmon – 400 g
  • Hard cheese – 100 g

For the custard:

  • Milk – 200 ml
  • Eggs – 2
  • Salt and pepper to taste

Preparation:

  1. Chop the frozen butter and sifted flour together into fine crumbs.
  2. Add the egg and knead into a dough.
  3. Roll out the dough slightly larger than the baking dish (to create an edge), then place it in the dish. Cover the dough with a sheet of parchment and fill with beans or peas. Bake at 180°C (350°F) for about 15 minutes to keep the dough from becoming soggy once the filling is added.
  4. Cut the salmon into medium-sized pieces and grate or dice the hard cheese. For the custard, beat the eggs with salt and pepper, add the milk, and mix well.
  5. Remove the crust from the oven (after 15 minutes), discard the parchment and beans, add the salmon, top with the cheese, then pour the custard over everything.
  6. Bake at 180°C (350°F) for about one hour. Remove the quiche from the dish and cut it into portions.
