We suggest making potato cakes with mushrooms.
Ingredients:
- Potatoes – 800 g
- Salt to taste
- Ground black pepper – to taste
- Egg – 1 pc
- Premium wheat flour – 1/2 cup
- Mushrooms (button mushrooms) – 300 g
- Onion – 1 pc
- Refined oil – 30 ml
Preparation:
- Prepare the ingredients according to the list. You can substitute button mushrooms with oyster mushrooms, as they also cook quickly, though they have a firmer texture. Thoroughly wash the potatoes and boil them in their skins until tender. Let them cool enough to handle, then peel. Clean the mushrooms and onion.
- Dice the mushrooms into cubes or thin slices, and chop the onion into cubes.
- Sauté the mushrooms and onion in 1-2 tablespoons of oil until fully cooked. Season with salt and pepper to taste during the cooking process.
- Grate the warm potatoes. The size of the grater doesn’t matter. Add a pinch or two of salt and ground pepper.
- Add the raw egg and flour. Mix well.
- Knead the potato dough until it’s soft but not too sticky.
- With wet hands, take pieces of the dough and roll them into balls. Flatten each ball and place a tablespoon of filling in the center.
- Seal the edges to form a small pie. Repeat with the rest of the dough and filling.
- Heat oil in a pan and fry the potato cakes until they are beautifully golden brown.
- Remove the finished cakes from the pan and serve hot with sour cream or tomato sauce.
