We invite you to try Portuguese-Style Baked Cod. The Portuguese have a rich culinary tradition of preparing cod in various ways, and this delicious, authentic dish is sure to impress.
Ingredients:
- 4 pieces of unsalted cod fillet (with skin)
- 6 potatoes
- 4 onions
- Green pitted olives
- 2 bay leaves
- 200 ml white wine
- Wheat flour
- 1 tbsp smoked paprika
- Salt to taste
- Fresh parsley
- Extra virgin olive oil
Preparation:
If the cod is salted, soak it in very cold water in the refrigerator for about 24 hours, changing the water every 6 hours.
- Prepare the potatoes. Peel, wash, and slice the potatoes into thin rounds. Season them to taste.
- Fry the potatoes. Heat some olive oil in a pan over medium heat. Once hot, fry the potatoes until golden on both sides. Remove them and spread evenly in a baking dish.
- Prepare the cod. Cut the cod fillets into smaller pieces and coat them lightly in flour. Using the same oil where the potatoes were fried, pan-fry the cod for about 2 minutes on each side. Remove and place over the potatoes in the baking dish.
- Cook the onions. Drain excess oil from the pan, then sauté the thinly sliced onions. Add the bay leaves and a little salt, stirring occasionally, until the onions start to change color.
- Add flavor. Stir in the smoked paprika and fry for a few seconds before pouring in the white wine. Add the olives, mix well, and let it simmer over low heat for 15 minutes.
- Preheat the oven. Turn on the oven to 200°C (390°F) so it can heat up.
- Assemble the dish. Pour the onion and wine mixture over the cod and potatoes, gently shaking the pan to evenly distribute the sauce.
- Bake. Place the dish in the oven and bake for 15 minutes. Serve immediately.
