We suggest preparing pork baked with vegetables in pots.
Ingredients:
(For 6 pots)
- 600 grams of lean pork
- 2 medium onions
- 2 medium carrots
- 2 sweet peppers
- 2 medium eggplants
- 3 ripe tomatoes
- 6 large potatoes
- 3-4 sprigs of dill
- 1 tablespoon of oil
- Salt, ground black pepper – to taste
Preparation:
- Wash all vegetables and greens thoroughly. Slice the eggplants into half-rings, after removing the stems. Salt them and leave for 15-20 minutes, then rinse under cold water to remove any bitterness.
- Peel the carrots and slice them into thin rounds or strips. Dice the onion. Remove the stems, seeds, and white membranes from the peppers, and dice them. Make cross-shaped cuts on the tomatoes, scald them with boiling water, remove the skin, and slice the flesh into half-rings.
- Rinse the meat under cold water, pat it dry, and cut into small pieces. Fry the meat with the onions over medium heat in a small amount of oil until half-cooked.
- Peel the potatoes, wash them, and cut them lengthwise into 4-6 parts.
- In each pot, layer the potatoes, fried meat with onions, carrots, peppers, eggplants, and tomatoes. Pour in boiled water, filling the pot two-thirds full. Salt to taste, optionally add a pinch of ground black pepper, and place in the oven for one hour at 200°C.
- Before serving, sprinkle each pot with finely chopped dill.
