Ingredients:
- 1 kg fish (cod, pollock, or hake)
- 3 eggs
- 1 onion
- 600 g potatoes
- 1 carrot
- 45 g clarified butter
- 1 L water
- Herbs, peppercorns, salt to taste
Instructions:
- Prepare the fish: Clean the fish, removing scales, head, and innards. Separate the fillets from the bones and cut into portions. Proper preparation is key to the dish’s flavor.
- Make the broth: Bring water to a boil and add onion, carrot, spices, bay leaf, and garlic. While not traditionally included, these ingredients add depth of flavor to the broth.
- Prepare the sauce: Reserve half a cup of broth for the sauce.
- Cook the fish: Add the fish to the boiling broth. Reduce heat to low and simmer for 10 minutes. Avoid vigorous boiling.
- Boil the eggs: Hard boil the eggs and chop finely.
- Make the sauce: Melt butter in a skillet, add the chopped eggs, and half a cup of reserved broth. Stir well.
- Combine: Transfer the fish to the skillet and coat it completely with the sauce. Simmer for a few minutes.
