We invite you to try making Perepechi (Udmurt Pies). Perepechi is an ancient Udmurt pastry traditionally baked for holidays or special occasions. These small tart-like baskets can be filled with a variety of ingredients, such as minced meat or giblets, fresh or sauerkraut, mushrooms, greens, potatoes, cheese, or grains.
Ingredients:
- Flour – 2 cups
- Eggs – 4 pieces
- Milk – 500 ml
- Butter (82% fat) to taste
- Salt to taste
For the Filling:
- Dill – 1/2 bunch
- Mushrooms – 500 g
- Cilantro – 1/2 bunch
- Eggs – 3 pieces
- Milk – 1/2 cup
- Butter (82% fat) – 5 tbsp
- Onion – 1 piece
- Salt to taste
Preparation:
- Prepare the Dough: Combine the flour with salt and sift. Add the beaten eggs, melted butter, and warm milk, kneading the dough until it is stiff yet elastic.
- Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Divide the dough into 6 portions and roll each into a ball. On a floured surface, roll each ball into a thin oval about 3–4 mm thick, pinching the edges to form a small basket shape.
- Prepare the Filling: Slice the mushrooms thinly and finely chop the onion.
- In a skillet, melt the butter and sauté the onion until golden. Add the mushrooms and cook until done, about 8–10 minutes. Let cool.
- Beat the eggs with salt, add milk, and mix well.
- Stir in the sautéed mushrooms and onions, finely chopped cilantro, and dill, mixing everything thoroughly.
- Place the dough baskets on a buttered baking sheet and fill them to the brim with the filling. Put the sheet in a preheated oven at 180°C (350°F) and bake for 25 minutes. Before serving, brush with melted butter.
