We suggest preparing Pea soup with smoked pork ribs.
Ingredients:
- Dry peas – 500 g
- Smoked pork ribs – 500 g
- Bacon – 100 g
- Onion – 1 pc.
- Carrot – 1 pc.
- Potatoes – 5-6 pcs.
- Oil – 1 tbsp
- Mustard – 3-4 tbsp
- Garlic – 3 cloves
- Dill and parsley – 1 bunch each
- Salt, ground black pepper
Preparation:
- Rinse the peas, cover with a small amount of water, and let sit for 3-4 hours. Cut the smoked pork ribs into sections of 2-3 ribs, place them in a pot, and cook for 1-1.5 hours until the meat easily separates from the bones.
- Peel the onion, carrot, and potatoes. Dice the onion and carrot finely, while cutting the potatoes into larger chunks.
- Strain the finished broth and return it to the pot. Remove the meat from the bones and set it aside in a bowl. Add the peas to the broth and cook for 30 minutes. Then add the potatoes and cook over medium heat for another 20 minutes.
- Meanwhile, heat the oil in a pan and sauté the onion and carrot until golden brown. Add them to the soup and cook for 10 minutes.
- 3-5 minutes before the soup is done, add the mustard, the reserved meat, salt, and pepper.
- Rinse and finely chop the herbs. Peel and finely chop the garlic. Slice the bacon into thin strips. Add the garlic, bacon, and herbs to the soup, and heat for 1-2 minutes. Remove from heat and let the soup sit for 30 minutes.
