Pea Soup with Smoked Meats

Ingredients

  • 300 g split peas
  • 250 g smoked bacon
  • 350 g smoked sausage
  • 1 large onion
  • 4 garlic cloves
  • 3 bay leaves
  • 5 allspice berries
  • 2 L water or chicken broth
  • 5 potatoes
  • 1 carrot
  • 1 parsley root
  • ⅔ tsp caraway seeds
  • 1 tsp mustard
  • 1 tbsp dried marjoram
  • 2 tbsp oil
  • Salt, pepper to taste

Instructions

1. Prepare the Peas

  • Rinse the split peas and soak them in cold water overnight.

2. Prepare the Smoked Meats

  • Dice the bacon and fry it in heated oil.
  • Add half of the sliced sausage and fry for a few minutes until golden.
  • Stir in the diced onion and continue frying.
  • At the end of frying, add pressed garlic, bay leaves, and allspice.

3. Cook the Soup

  • Pour water or broth into the pan with the sautéed ingredients.
  • Add the diced carrot, parsley root, and drained peas.
  • Simmer for 15 minutes, seasoning with caraway seeds, mustard, and marjoram.
  • Add the potatoes, cut into large cubes, and cook for another 15 minutes.

4. Final Touches

  • Once the peas are soft, season the soup with salt and pepper to taste.
  • Before serving, garnish with fresh parsley.
