Ingredients
- 300 g split peas
- 250 g smoked bacon
- 350 g smoked sausage
- 1 large onion
- 4 garlic cloves
- 3 bay leaves
- 5 allspice berries
- 2 L water or chicken broth
- 5 potatoes
- 1 carrot
- 1 parsley root
- ⅔ tsp caraway seeds
- 1 tsp mustard
- 1 tbsp dried marjoram
- 2 tbsp oil
- Salt, pepper to taste
Instructions
1. Prepare the Peas
- Rinse the split peas and soak them in cold water overnight.
2. Prepare the Smoked Meats
- Dice the bacon and fry it in heated oil.
- Add half of the sliced sausage and fry for a few minutes until golden.
- Stir in the diced onion and continue frying.
- At the end of frying, add pressed garlic, bay leaves, and allspice.
3. Cook the Soup
- Pour water or broth into the pan with the sautéed ingredients.
- Add the diced carrot, parsley root, and drained peas.
- Simmer for 15 minutes, seasoning with caraway seeds, mustard, and marjoram.
- Add the potatoes, cut into large cubes, and cook for another 15 minutes.
4. Final Touches
- Once the peas are soft, season the soup with salt and pepper to taste.
- Before serving, garnish with fresh parsley.
