Partridge with Apple and Chorizo

We offer a recipe for Partridge with Apple and Chorizo. Partridges are loved in Spain and the UK, so here they are prepared with Spanish chorizo and British apples.

Ingredients:

  • 4 partridges
  • 100 g of ready-made chorizo (sausage), diced
  • Canola oil
  • 2 red onions, thinly sliced
  • 2 tsp tomato paste
  • Bouquet garni (a bundle of aromatic herbs)
  • 300 ml of high-quality cider
  • 700 ml of chicken stock
  • 2 Granny Smith apples, peeled, cored, and diced
  • Lemon juice
  • Butter

Instructions:

Before starting to prepare the partridge with apples and chorizo, separate the breasts and legs from the partridges (or ask your butcher to do this for you).

Sauce:

  1. In the same pan, fry the onions, then increase the heat until they turn golden. Add the chorizo, cook for another minute, then add the tomato paste and bouquet garni, stirring to coat everything. After about 30 seconds, pour the cider into the pan. Let it reduce by at least half, then add the chicken stock and bring to a boil.
  2. Mix the diced apples with lemon juice to prevent browning. Heat the butter until foamy, then add the apple pieces and let them caramelize to a golden-brown color, but they should not fall apart.
  3. Continue cooking the sauce until it thickens, then add the caramelized apples and stir.

Partridges and Chorizo:

  1. In a deep pan, sauté the chorizo until it releases some fat, then briefly increase the heat to make it crispy. Remove the chorizo from the pan.
  2. Place the partridge pieces in the pan, skin-side up, cover with a lid, and gently simmer for 15 minutes or until tender. After cooking, let the partridges rest in a warm place for 10 minutes.

Your Partridge with Apple and Chorizo is ready. Drizzle the meat with the sauce. Serve the dish with apple, chorizo, onions, and fried potatoes or brown rice. Enjoy!
