Pappardelle with Mushrooms

We suggest making Pappardelle with Mushrooms. A classic Italian pasta dish featuring wide, flat noodles.

Ingredients:

  • 200g pappardelle pasta
  • 200g mushrooms (such as porcini or cremini)
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 50g butter
  • 150ml white wine
  • Fresh parsley, chopped
  • 2 tbsp grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Prepare the mushrooms: Clean the mushrooms and slice them about 1/4 inch thick.
  2. Sauté the garlic: Crush the garlic cloves with the flat side of a knife. Heat the olive oil in a skillet and add the garlic. Cook until fragrant, then remove and discard.
  3. Cook the mushrooms: Add the butter to the skillet and melt. Add the mushrooms, season with salt and pepper, and cook over medium heat for about 10 minutes, or until tender.
  4. Deglaze the pan: Increase the heat and pour in the white wine. Let it reduce until most of the liquid has evaporated, leaving a concentrated sauce.
  5. Cook the pasta: Cook the pappardelle according to the package instructions until al dente.
  6. Combine: Drain the pasta and add it to the skillet with the mushrooms and sauce. Toss to coat, then stir in the Parmesan cheese and chopped parsley.
  7. Serve immediately: Divide the pasta among plates and serve hot.

  • For a richer flavor, use dried porcini mushrooms rehydrated in warm water.
  • To make the dish creamier, add a splash of heavy cream to the sauce.
