Pan-Seared Sea Bass with a Vibrant Herb Sauce

Ingredients:

  • 4 sea bass fillets (you could also use snapper or cod as good alternatives)
  • 8 small tomatoes
  • A generous bunch of fresh herbs: basil, parsley, dill, cilantro (feel free to mix and match your favorites!)
  • 1 teaspoon coriander seeds
  • 1 teaspoon fennel seeds (or a pinch of dried fennel)
  • 2 bay leaves
  • 2 sprigs of fresh oregano (or thyme)
  • 2 cloves of garlic
  • 1 lemon
  • Olive oil
  • Salt and freshly ground black pepper to taste

Preparation:

  1. Preheat your oven to 300°F (150°C). Peel and finely chop the garlic. Wash and halve the tomatoes lengthwise. Arrange them cut-side down on an oiled baking sheet, drizzle with a little more olive oil, and bake for 20 minutes.
  2. Carefully flip the tomatoes so the cut sides are now facing up. Sprinkle them with the chopped garlic and oregano leaves. Add the bay leaves, drizzle with a bit more olive oil, and return to the oven for another 20 minutes. The slow roasting will bring out their natural sweetness.
  3. Meanwhile, rinse and thoroughly dry your fresh herbs. Pluck the leaves from the stems and combine them in a blender with about ½ cup (100ml) of olive oil and the juice of one lemon. Lightly crush the coriander and fennel seeds using a mortar and pestle or the flat side of a knife, and add them to the herb mixture. Season with salt and pepper. Gently warm the sauce in a small saucepan over low heat (don’t let it boil!) – you want it to become fragrant but retain its fresh, vibrant color.
  4. Keep the roasted tomatoes warm. Increase the oven temperature to 350°F (180°C). Lightly season the sea bass fillets with salt and pepper. Place them in a baking dish and drizzle with a little olive oil. Bake for 5-7 minutes, flipping once gently halfway through – the fish should be cooked through and flaky but still moist.
  5. To serve, place the pan-seared sea bass fillets on individual plates. Spoon a generous amount of the fragrant herb sauce over the fish. Serve immediately alongside the warm, roasted tomatoes.
