Pan-Fried Liver with Potato and Apple Mash

This dish is a delightful take on a comforting classic. Pan-Fried Liver with Potato and Apple Mash brings together tender, savory liver and a surprisingly light and flavorful side dish. Ingredients:

  • 1 lb (500g) potatoes (a floury variety works best)
  • 7 oz (200g) tart apples
  • Salt to taste
  • 4 sprigs of thyme
  • 2 sprigs of sage
  • 3 white onions
  • 3 tbsp oil
  • ½ cup (100ml) milk
  • 2 tbsp butter
  • A pinch of freshly grated nutmeg
  • 1 lb (500g) veal liver (can be substituted with beef liver)
  • 2 tbsp flour
  • Black pepper

Instructions:

  1. Prepare the Mash: Peel and cut the potatoes and apples into chunks. Place them in a pot with salted water and boil for about 15 minutes, or until tender.
  2. Sauté the Onions and Herbs: Pick the leaves from the thyme and sage. Slice the onions into thin rings. Heat 2 tbsp of oil in a skillet over medium heat. Sauté the onions for about 10 minutes until they are a beautiful golden brown. Season with a pinch of salt, then set them aside.
  3. Prep the Liver: Pat the liver dry with a paper towel, remove any membranes or tough parts, and slice it into pieces about half an inch thick. Lightly dredge the liver slices in flour, shaking off any excess.
  4. Finish the Mash: Drain the potatoes and apples, letting them dry slightly. In a small saucepan, warm the milk and ½ tbsp of butter. Mash the potatoes and apples together, gradually adding the warm milk and butter mixture. Season with salt and nutmeg, and keep the mash warm.
  5. Fry the Liver: In the same skillet, heat 1 tbsp of oil and the remaining 1.5 tbsp of butter over medium-high heat. Pan-fry the liver for about 2 minutes on each side. Add the thyme and sage leaves during the last minute of cooking. Once done, season with salt and pepper. Add the cooked onions to the skillet to warm them up with the liver.
  6. Serve: Arrange the liver and onions on a plate with a generous scoop of the potato and apple mash. Garnish with fresh herbs and serve immediately.

  • Check the Color: High-quality liver should have a light pinkish color.
  • Don’t Overcook It: The key to tender liver is to cook it quickly. It should still be slightly pink on the inside. Overcooking will make it tough and rubbery.
