Omelette with Garlic Cheese, Mushrooms, and Spinach

This hearty, flavorful, and incredibly delicious omelette is the perfect start to your day or a quick, satisfying dinner. With a creamy garlic cheese, earthy mushrooms, and healthy spinach, it’s a dish that easily serves two adults, especially when paired with a fresh, crisp salad.

Ingredients (Serves 2):

  • 150 g (5.3 oz) mushrooms (such as chanterelles and button mushrooms)
  • 1 tablespoon unsalted butter
  • ¼ teaspoon salt (divided into 2 parts)
  • ¼ teaspoon freshly ground black pepper (divided into 2 parts)
  • 30 g (1 oz) fresh baby spinach
  • 3 large eggs (preferably free-range or organic)
  • 3 tablespoons milk
  • ½ tablespoon olive oil
  • 40 g (1.4 oz) fresh garlic cheese
  • ¼ bunch of scallions

For Serving:

  • Salad greens of your choice (leafy greens, mixed salad, or arugula)

Preparation:

  1. Prepare the Mushrooms and Spinach:
    • Clean the mushrooms and slice them into smaller pieces if needed.
    • Melt the butter in a pan and sauté the mushrooms until they are golden brown.
    • Season with half of the salt and pepper.
    • Add the spinach and cook until it wilts. Set the mixture aside.
  2. Make the Omelette Base:
    • Whisk the eggs with the milk and the remaining salt and pepper.
    • Heat a clean pan with the olive oil over medium heat and pour in the egg mixture.
    • Cook until the eggs begin to set and the underside is golden brown.
  3. Stuff and Fold:
    • Place the sautéed mushrooms and spinach on one half of the omelette.
    • Add small pieces of the garlic cheese.
    • Slice the scallions and sprinkle half of them over the filling.
    • Fold the omelette in half and continue to cook over low heat until the cheese begins to melt.
    • Transfer the omelette to a cutting board and slice it in half.
  4. Serve:
    • Garnish with the remaining scallions and serve immediately with a fresh salad on the side.
