Ingredients (Serves 2):
- 150 g (5.3 oz) mushrooms (such as chanterelles and button mushrooms)
- 1 tablespoon unsalted butter
- ¼ teaspoon salt (divided into 2 parts)
- ¼ teaspoon freshly ground black pepper (divided into 2 parts)
- 30 g (1 oz) fresh baby spinach
- 3 large eggs (preferably free-range or organic)
- 3 tablespoons milk
- ½ tablespoon olive oil
- 40 g (1.4 oz) fresh garlic cheese
- ¼ bunch of scallions
For Serving:
- Salad greens of your choice (leafy greens, mixed salad, or arugula)
Preparation:
- Prepare the Mushrooms and Spinach:
- Clean the mushrooms and slice them into smaller pieces if needed.
- Melt the butter in a pan and sauté the mushrooms until they are golden brown.
- Season with half of the salt and pepper.
- Add the spinach and cook until it wilts. Set the mixture aside.
- Make the Omelette Base:
- Whisk the eggs with the milk and the remaining salt and pepper.
- Heat a clean pan with the olive oil over medium heat and pour in the egg mixture.
