Norwegian Salad

We suggest preparing a simple and delicious Norwegian Salad.

Ingredients:

  • Leaf lettuce (e.g., romaine) – 1 head
  • Eggs – 2 pcs
  • Feta cheese – about 100 g
  • Olives – 20 pcs
  • Salmon – 100 g
  • Dried dill – 2 tbsp
  • Bread – 3 slices
  • Butter – 1 tbsp
  • Vinegar – 3 tbsp

Preparation:

  1. Make croutons. Cut the bread into cubes and fry in butter until golden and crispy.
  2. Prepare poached eggs. Bring water to a boil with vinegar and a pinch of salt. Once boiling, stir vigorously to create a whirlpool. Crack the eggs one at a time into the center of the swirl. Cook for 3 minutes, then carefully remove and drain.
  3. Assemble the salad. While the eggs are cooking, divide the lettuce and the rest of the ingredients evenly onto two plates (dice the feta cheese in advance). Finally, place a poached egg on top and sprinkle with dill.
  4. Serve with croutons.
