Non-Kabob or Uzbek Burger is a delicious Uzbek dish that resembles a burger. Here’s a recipe to make your own at home.
Ingredients:
For the buns:
- 200 ml warm milk
- 200 ml warm water
- 1 tbsp salt
- 0.5 tbsp sugar
- 8 g dry yeast
- 50 ml oil
- 600 g flour
- 1 egg for brushing
- Sesame seeds for sprinkling
For the filling:
- 600 g beef
- 50 ml oil
- 250 g onion
- 100 g red bell pepper
- 100 g tomatoes
- Salt and pepper to taste
- Zira and coriander to taste
For serving:
- 300 g red onion
- A few sprigs of dill
- 9% vinegar to taste
Instructions:
For the buns:
- In a bowl, combine milk, warm water, salt, sugar, yeast, and oil. Mix.
- Add flour and knead a soft dough. Place in a warm place for 1 hour.
- Divide the dough into 6 equal parts, shape each into a ball, cover with a towel, and let rest for 5 minutes.
- Roll each piece of dough into a 1.5 cm thick circle, 12-13 cm in diameter.
- Place on a baking sheet. Let rest in a warm place for 25-30 minutes.
- Brush the buns with egg and sprinkle with sesame seeds.
- Bake in the oven at 180°C for 25-30 minutes.
For the filling:
- Cut the beef into large cubes or slices. Fry in oil, then simmer under a lid over low heat for 40 minutes.
- Cut the onion, bell pepper, and tomatoes into cubes.
- After 40 minutes, add the vegetables to the meat. Stir and season with spices. Cover and simmer for 20-25 minutes.
- Slice the red onion very thinly. Add any chopped herbs and drizzle with vinegar.
Slice the cooled buns in half, but not all the way through. Fill with meat filling and onion.
