We suggest to prepare No-Bake Lime cheesecake.
Ingredients:
- 500g sour cream
- 200g cookies (e.g., digestive biscuits)
- 150g cream cheese
- 120g sugar
- 100g butter
- 1 lime
- 1 packet vanilla sugar
- 1 packet green jelly
- 1 packet gelatin
- 2 sprigs of mint (for garnish)
Instructions:
Start by preparing the base. Crush the cookies into crumbs using a blender or food processor. If you don’t have one, you can put the cookies in a bag and crush them with a rolling pin. Soften the butter slightly. Take a springform pan, approximately 22 cm in diameter. Line the bottom with parchment paper. Place the cookie crumbs in the bottom of the pan, distribute evenly, and press down firmly. Refrigerate for 30 minutes.
Now, let’s prepare the main part of the cake – the jelly cream. Pour gelatin over water and let it bloom for about 10 minutes or as indicated on the package. Heat the gelatin over low heat, stirring constantly, until it dissolves completely. Do not boil. Cool. Sift the cream cheese to remove any lumps. Add granulated sugar and vanilla sugar, then fold in the sour cream. Zest and juice the lime. Add the lime zest and juice to the cream mixture. Gradually pour the cooled gelatin into the cream mixture, whisking constantly. Pour the resulting cream into the prepared pan on top of the cookie base. Refrigerate for about 2 hours.
Prepare the jelly according to the package instructions, but use 100 ml less water. Let the jelly cool. Remove the cake from the refrigerator and pour the cooled jelly over the set cream layer. Refrigerate the cake for about 5 hours until completely set. Before serving, remove the cake from the springform pan. Decorate with lime slices and mint leaves.
