Ingredients:
For the salad:
- 3 green onion stalks, thinly sliced diagonally
- ½ bunch radishes, greens removed, thinly sliced
- 2 small carrots, shredded
- 2 cups Napa cabbage, finely chopped
- ¼ cup cilantro, chopped
- ¼ cup cashew nuts, crushed (optional)
For the coconut dressing:
- ½ cup canned coconut milk (available in Asian grocery stores)
- 1 tbsp honey
- Juice of 1 lime
- 1 tbsp low-sodium soy sauce
- ½ tsp salt
Instructions:
- In a large bowl, combine all the salad ingredients.
- In a small bowl, whisk together all the coconut dressing ingredients.
- Pour the dressing over the salad and toss until the vegetables are evenly coated.
