Napa Cabbage, Radish and Carrot Salad with Coconut Dressing

Ingredients:

For the salad:

  • 3 green onion stalks, thinly sliced diagonally
  • ½ bunch radishes, greens removed, thinly sliced
  • 2 small carrots, shredded
  • 2 cups Napa cabbage, finely chopped
  • ¼ cup cilantro, chopped
  • ¼ cup cashew nuts, crushed (optional)

For the coconut dressing:

  • ½ cup canned coconut milk (available in Asian grocery stores)
  • 1 tbsp honey
  • Juice of 1 lime
  • 1 tbsp low-sodium soy sauce
  • ½ tsp salt
