Mushrooms with Bryndza, Onion and Parsley

We suggest preparing a delicious appetizer – Mushrooms with Bryndza, Onion, and Parsley.

Ingredients:

  • Approximately 500 g of medium-sized mushrooms
  • About 200 g of bryndza cheese
  • 2 small white onions or 3 larger shallots
  • Oil
  • 1 tablespoon chopped parsley (can be substituted with green onions)
  • Freshly ground black pepper

Preparation:

  1. Preheat the oven to 180°C (356°F). Line a baking tray with parchment paper. Wash and dry the mushrooms, then remove their stems (store them in the fridge—they can be used later for pizza or soup).
  2. Prepare the filling. Dice the onions and sauté them in oil until soft and slightly browned. Drain any excess fat and pat dry with a paper towel. Let the onions cool, then mix them with the bryndza cheese and parsley. Season with pepper to taste.
  3. Stuff the mushrooms. Fill the mushroom caps with the prepared filling. Place the mushrooms (filling side up) on the lined baking tray and bake in the preheated oven for about 20 minutes.
  4. Serve the appetizer. Enjoy the mushrooms hot or cold.

Tip: Before baking, you can top the filling with a slice of bacon for extra flavor.
