Moldovan Cabbage Pies (Verzere)

We invite you to make Moldovan Cabbage Pies, known as Verzere. Verzere is a traditional Moldovan dish, consisting of small, folded pastries filled with sauerkraut or fresh cabbage. Their taste is similar to puff pastry pies but with a more delicate texture.

Ingredients:

For the dough:

  • Oil – ½ cup
  • Water – ½ cup
  • Flour – 2 cups
  • Salt to taste

For the filling:

  • Sauerkraut (can include carrots) – 2 cups
  • Carrot – 1
  • Onion – 1
  • Oil
  • Egg yolk – 1

Preparation:

  1. Prepare the dough by mixing water with oil and salt, then gradually adding flour to form a dough.
  2. Cover the dough with a towel and let it rest for 20-25 minutes.
  3. While the dough rests, prepare the filling. Sauté the finely chopped onion until translucent.
  4. Squeeze the sauerkraut to remove excess liquid, then add it to the pan with the onion. Sauté until lightly golden.
  5. The dough should be very soft. Divide it into 14-15 portions.
  6. Roll each portion thinly into a rectangle. Place the filling on one edge, fold in the sides, and roll up like a small log.
  7. Place the pies on a baking sheet lined with parchment paper. Brush the tops with egg yolk and bake at 200°C (390°F) for 20 minutes.
