Milanese Risotto

Let’s prepare an authentic Italian dish: Milanese Risotto.

Ingredients:

  • 1 cup Arborio rice
  • 3 cups chicken broth
  • 1/2 tsp saffron
  • 3 tbsp butter
  • 1/2 onion
  • 2 cloves garlic
  • 1/4 cup white wine
  • 80g Parmesan cheese

Instructions:

  1. Prepare the broth: Add saffron to the chicken broth and bring to a boil. Set aside.
  2. Sauté the aromatics: Melt 2 tablespoons of butter in a deep skillet. Add chopped onion and garlic. Sauté until softened, about 4-5 minutes.
  3. Toast the rice: Add Arborio rice and stir constantly to coat the grains in the butter.
  4. Add the wine: Pour in the white wine and let it be absorbed completely.
  5. Simmer with broth: Gradually add the chicken broth, one ladleful at a time, stirring constantly. Allow each addition of broth to be absorbed before adding more.
  6. Finish the risotto: Once the rice is cooked al dente, remove from heat. Stir in 1 tablespoon of butter and grated Parmesan cheese.
  7. Serve immediately: Serve the risotto hot.
