Ingredients:
- 1 cup Arborio rice
- 3 cups chicken broth
- 1/2 tsp saffron
- 3 tbsp butter
- 1/2 onion
- 2 cloves garlic
- 1/4 cup white wine
- 80g Parmesan cheese
Instructions:
- Prepare the broth: Add saffron to the chicken broth and bring to a boil. Set aside.
- Sauté the aromatics: Melt 2 tablespoons of butter in a deep skillet. Add chopped onion and garlic. Sauté until softened, about 4-5 minutes.
- Toast the rice: Add Arborio rice and stir constantly to coat the grains in the butter.
- Add the wine: Pour in the white wine and let it be absorbed completely.
- Simmer with broth: Gradually add the chicken broth, one ladleful at a time, stirring constantly. Allow each addition of broth to be absorbed before adding more.
- Finish the risotto: Once the rice is cooked al dente, remove from heat. Stir in 1 tablespoon of butter and grated Parmesan cheese.
- Serve immediately: Serve the risotto hot.
