We invite you to prepare Meat Zrazy with Filling in Mushroom Sauce – a delicious and hearty dish that will impress your family.
Ingredients
For the zrazy:
- 600 g pork or beef mince (should not be too lean)
- 1 egg
- 2 tbsp breadcrumbs
- 4 pickled cucumbers
- 150 g smoked bacon
- 2 onions
- 2–3 tbsp Bavarian mustard
- 3 tbsp oil
- Salt, pepper to taste
For the sauce:
- 1 onion
- 200 g mushrooms
- 250 ml chicken broth or water
- 1 tbsp wheat flour
- 70 ml water
- Salt, pepper to taste
Instructions
Preparing the Minced Meat
- Place the minced meat in a bowl. Ensure the pork or beef is not too lean.
- Add the egg, breadcrumbs, salt, and pepper to taste.
- Mix the ingredients thoroughly for a few minutes—this will make the meat more elastic and easier to shape into zrazy.
Making the Filling
- Cut the bacon into strips and fry it in oil until golden.
- Add the onion, sliced into half-rings, and sauté for a few more minutes.
- Stir in the pickled cucumbers, sliced into strips, and cook for another 2–3 minutes.
- Finally, add the mustard and season with a pinch of salt and pepper.
- Set the filling aside to cool.
Forming the Meat Zrazy
- Divide the minced meat into five equal portions and shape them into oval patties.
- Place a small amount of filling in the center, fold the edges over, and shape into elongated rolls.
- Roll each zrazy in breadcrumbs.
- Fry them in oil, turning occasionally, until golden brown on all sides.
- Transfer to an oven and bake for 15 minutes at 180°C (356°F).
Preparing the Sauce
- While the zrazy are baking, sauté the finely diced onion in the remaining oil until it turns dark golden brown—this will give the sauce a richer flavor.
- Add the mushrooms, sliced into half-rings, and fry for another 3–4 minutes.
- Pour in the broth or water and let it simmer on low heat.
- Mix the flour with cold water and gradually add it to the sauce to thicken it.
- Season with salt and pepper to taste.
Serving
The Meat Zrazy with Filling in Mushroom Sauce are ready! You can place the zrazy in the sauce for a short while before serving, though this step is optional. Serve with mashed potatoes, green peas, and pickled cucumbers.
