Let’s make delicious Filipino spring rolls, or lumpia!
Lumpia is a popular Filipino snack or appetizer that’s similar to Chinese spring rolls. They’re typically filled with a savory mixture of ground meat, vegetables, and spices, wrapped in thin pastry sheets, and then deep-fried until crispy.
Ingredients (makes 12 pieces):
For the wrappers:
- 6 spring roll wrappers (215mm x 215mm)
- Oil for deep-frying
- 1 tsp cornstarch
- 2 tbsp water
- Dipping sauce of your choice
For the filling:
- 200g ground pork and beef mixture
- 2-3 cloves garlic
- 1-1.5 cm fresh ginger
- 1 tbsp light soy sauce (or to taste)
- 1 egg
- Pinch of ground black pepper (or to taste)
- 50g cabbage (green or napa)
Instructions:
Prepare the filling:
- Prep the vegetables: Wash and thinly slice the cabbage.
- Mince aromatics: Mince the garlic and grate the ginger.
- Combine ingredients: In a bowl, combine the ground meat, cabbage, garlic, ginger, soy sauce, pepper, egg, and a pinch of salt. Mix well.
Assemble the lumpia:
- Prepare the cornstarch slurry: Mix the cornstarch and water to create a paste.
- Cut the wrappers: Cut each spring roll wrapper in half lengthwise.
- Fill and roll: Place a spoonful of filling on the lower part of a wrapper. Roll it up tightly, sealing the edge with a little cornstarch slurry.
- Fry: Heat oil in a deep fryer or large skillet to 170°C. Fry the lumpia for 3-5 minutes, or until golden brown, turning occasionally.
- Drain: Drain the lumpia on paper towels.
Serve: Serve the lumpia hot with your favorite dipping sauce.
Tips:
- Filling: You can customize the filling with your favorite vegetables, such as carrots, onions, or bean sprouts.
- Wrapping: If you don’t have spring roll wrappers, you can use thin rice paper or even wonton wrappers.
- Freezing: Cooked lumpia can be frozen for later. Reheat in a preheated oven or air fryer.
