Lohikeitto – Finnish Creamy Salmon Soup

We suggest preparing Lohikeitto – Finnish creamy salmon soup.

In Finnish, “lohi” means salmon, which gives the traditional Finnish fish soup its name, Lohikeitto. While salmon is commonly used, you can also make this soup with trout or char.

Ingredients:

  • salmon or trout (fillet or steak) – 500 g
  • potatoes – 3 pcs.
  • water – 1 liter
  • small carrot – 1 pc.
  • small onion – 1 pc.
  • leek – ½ pc.
  • 20% cream – 200 g
  • bay leaves – 2 pcs.
  • sea salt – 1 tsp
  • ground black pepper – to taste

Preparation:

  1. Rinse the salmon (or trout) fillet and place it in a pot with cold water. Bring it to a boil over medium heat, skim off any foam, and cook for about 5 minutes.
  2. Remove the fish and strain the fish stock through a sieve or colander, then return it to the heat. Peel and dice the potatoes and slice the carrot into half-moons, then add them to the stock. Peel and finely chop the onion, adding it to the broth (you can also sauté the onion and carrot in butter or oil before adding, or simply add them directly to the boiling broth). Season with salt, pepper, and bay leaves.
  3. Cook the vegetables for about 15 minutes, until the potatoes are halfway done. Meanwhile, break down the fish by removing any bones, skin, and fat, leaving large chunks of slightly undercooked fish.
  4. Rinse and slice the leek into rounds. After 15 minutes, add the boneless fish chunks and sliced leek to the soup. Pour in the cream, bring the soup to a gentle boil, and cook for 5 minutes. By this time, the potatoes should be tender, and the fish will be fully cooked.
