Liver in Sweet and Spicy Sauce

Let’s try a Polish classic: Liver in a Sweet and Spicy Sauce. This unique dish will satisfy even the most discerning palate.

Ingredients:

  • 700g chicken liver
  • 50g raisins
  • 2 onions
  • 1 teaspoon honey
  • 1 tablespoon tomato paste
  • 1 tablespoon butter
  • 4 tablespoons olive oil
  • 200ml water
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions:

  1. Prepare the liver: Clean the liver, rinse it, and drain in a colander. Slice the onions thinly.
  2. Sauté the onions: Melt the butter and 1 tablespoon of olive oil in a large skillet. Add the onions and sauté until softened, stirring occasionally.
  3. Create the sauce: Add water, honey, tomato paste, and raisins to the onions. Stir well and simmer over low heat for about 10 minutes.
  4. Cook the liver: Heat the remaining olive oil in a large skillet. Sear the liver on both sides until no more pink remains.
  5. Combine and simmer: Add the liver to the onion mixture (discard any excess fat). Add spices, stir, and simmer over low heat for 10-15 minutes, or until the sauce has thickened. If the sauce becomes too thick, add a little water.

Your liver in a sweet and spicy sauce is ready! Remember, the dish should have a slight kick. Serve with potatoes for a complete meal. Enjoy!
