Ingredients:
- 700g chicken liver
- 50g raisins
- 2 onions
- 1 teaspoon honey
- 1 tablespoon tomato paste
- 1 tablespoon butter
- 4 tablespoons olive oil
- 200ml water
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions:
- Prepare the liver: Clean the liver, rinse it, and drain in a colander. Slice the onions thinly.
- Sauté the onions: Melt the butter and 1 tablespoon of olive oil in a large skillet. Add the onions and sauté until softened, stirring occasionally.
- Create the sauce: Add water, honey, tomato paste, and raisins to the onions. Stir well and simmer over low heat for about 10 minutes.
- Cook the liver: Heat the remaining olive oil in a large skillet. Sear the liver on both sides until no more pink remains.
- Combine and simmer: Add the liver to the onion mixture (discard any excess fat). Add spices, stir, and simmer over low heat for 10-15 minutes, or until the sauce has thickened. If the sauce becomes too thick, add a little water.
