Light Yogurt cake with sour cream frosting

We suggest preparing a Light Yogurt cake with sour cream frosting.

Ingredients:

For the cake layers:

  • Eggs – 3 pcs.
  • Flour – 2 cups
  • Yogurt (kefir) – 1 cup
  • Sugar – 1 cup
  • Baking soda – 1/2 tsp
  • Cocoa powder – 1 tsp

For the frosting:

  • Sour cream – 500 g
  • Sugar – 100 g
  • Cocoa powder (for sprinkling)
  • Candied fruits or nuts (optional)

Instructions:

  1. Whisk together the yogurt, sugar, eggs, baking soda, and flour. The consistency of the batter should resemble thick sour cream. Divide the batter into two equal parts, adding a teaspoon of cocoa powder to one of them. Bake two cake layers, let them cool, and then slice each in half with a sharp knife (4 layers in total).
  2. Whip the sour cream with sugar. Spread the frosting over each layer (you can add candied fruits or nuts if desired). Sprinkle cocoa powder on top and let the cake sit to absorb the flavors. After 3 hours, the light yogurt cake with sour cream frosting is ready. Enjoy!
