This Italian-style white chocolate mousse is the definition of elegance in a glass. It’s incredibly light, airy, and literally melts on your tongue, making it the perfect grand finale for a cozy family Sunday or a sophisticated dinner party with friends. While it looks like it came from a high-end pasticceria, it’s surprisingly simple to whip up at home.
Ingredients:

200g high-quality white chocolate (look for one with real cocoa butter for the best melt)

4 pasteurized egg whites (at room temperature)

200ml heavy whipping cream (33–36% fat), well-chilled

A pinch of salt (to help the egg whites stabilize)

Instructions:
1. Melt the Chocolate
Break the white chocolate into small, uniform pieces. Melt it using a double boiler (a bowl over a pot of simmering water) or in the microwave in 30-second bursts, stirring in between.
Chef’s Note: White chocolate is delicate and can burn easily! Once it’s smooth and glossy, remove it from the heat and let it cool slightly until it’s just warm to the touch.
2. Whip the Cream
In a chilled bowl with chilled beaters, whip the heavy cream on medium-low speed. You’re looking for a soft, airy consistency—think soft clouds, not stiff butter.
3. The First Fold
Using a silicone spatula, gently fold the whipped cream into the warm melted chocolate. Use a light “under-and-over” motion to keep the air in the mixture. If you’re adding liqueur, now is the time!
4. Reach for Stiff Peaks
In a separate, clean bowl, whisk the egg whites with a tiny pinch of salt until they form stiff peaks (they should stand straight up when you lift the whisk). Gently fold the whites into your chocolate-cream base in two batches. Be patient here—you want to keep it as fluffy as possible.
5. The Big Chill
Spoon or pipe the mousse into individual serving glasses, ramekins, or one large glass bowl. Refrigerate for at least 3 hours (or overnight) to allow the mousse to set and develop its signature texture.
Serving Suggestions:
Before serving, top each portion with fresh raspberries and a few chocolate shavings. The acidity of the fruit cuts through the sweetness of the white chocolate beautifully.
