We offer you to prepare Italian Sausage and Tortellini Soup.
Ingredients (for an 8-liter pot):
For the Sausage Meatballs:
- ½ cup breadcrumbs
- 450 g Italian sausage
- ¼ cup fresh parsley, chopped
- 1 ½ teaspoons oregano
- ½ cup Parmesan cheese, finely grated
- 1 large egg
- Salt and pepper to taste
For the Soup:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pinch of red pepper flakes
- 8 cups chicken broth
- 500 g diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon oregano
- 300 g tortellini
- ½ cup grated Parmesan cheese
- 250 g spinach, coarsely chopped
- Salt and pepper to taste
- ¼ cup basil, chopped
Preparation:
Preparing the Sausage Meatballs:
- Slice and add the Italian sausage to a large bowl.
- Add breadcrumbs, parsley, oregano, Parmesan cheese, egg, salt, and pepper to taste.
- Gently mix the mixture with your hands to distribute it evenly.
- Form small meatballs from the mixture, about 2.5 – 3 cm, and transfer them to a large plate.
Preparing the Soup:
- Heat the oil in an 8-liter pot or other large pot over medium heat. Add the meatballs and turn occasionally to brown all sides, about 5 minutes.
- Remove the meatballs from the pot and set aside.
- Add the onion and sauté for 3-5 minutes, stirring occasionally.
- Add garlic and red pepper flakes. Cook until fragrant, about 1 minute.
- Add the meatballs again, chicken broth, diced tomatoes, tomato paste, oregano, and tortellini. Bring to a boil.
- Reduce heat and simmer until the tortellini are cooked through, about 7-10 minutes.
- Add cheese and spinach. Cook until the cheese melts into the broth and the spinach wilts, about 1 minute. Season with salt and pepper to taste and add basil.
The Italian Sausage and Tortellini Soup is ready. Remove from heat and serve. Enjoy!
