Instructions:

  1. Sauté the Aromatics: In a small saucepan, melt the butter with the olive oil over medium heat. Add the finely chopped shallot (or onion) and sauté until it becomes translucent and soft, about 3-4 minutes. Do not let it brown.
  2. Add the Wine: Pour in the white wine. Increase the heat slightly and let the wine simmer and reduce by half. This process burns off the alcohol and concentrates the flavor.
