Let’s make Homemade Whoopie Pies!

Ingredients:

For the cookies:

  • 1 large egg
  • 80g unsalted butter
  • 100g powdered sugar
  • 3 tbsp cocoa powder
  • 100ml milk
  • 130g all-purpose flour
  • 1 tsp baking powder
  • 1g vanilla extract

For the filling:

  • 150ml heavy cream (35% fat)
  • 4 tbsp powdered sugar

Instructions:

  1. Leave the butter at room temperature to soften.
  2. In a bowl, whisk together the cocoa powder, flour, baking powder, and vanilla.
  3. Cream together the butter and powdered sugar until light and fluffy.
  4. Beat in the egg.
  5. Gradually add the dry ingredients (flour mixture) and milk, mixing until just combined.
  6. Using a spoon or piping bag, drop the batter onto a baking sheet in small, round mounds.
  7. Bake in a preheated oven at 180°C (350°F) for 10-12 minutes. While the cookies are cooling, prepare the filling.
  8. Beat the heavy cream and powdered sugar until stiff peaks form.
  9. Pipe or spread the cream onto one cookie and top with another. Dust with powdered sugar, if desired.
