Let’s make Homemade Whoopie Pies!
Ingredients:
For the cookies:
- 1 large egg
- 80g unsalted butter
- 100g powdered sugar
- 3 tbsp cocoa powder
- 100ml milk
- 130g all-purpose flour
- 1 tsp baking powder
- 1g vanilla extract
For the filling:
- 150ml heavy cream (35% fat)
- 4 tbsp powdered sugar
Instructions:
- Leave the butter at room temperature to soften.
- In a bowl, whisk together the cocoa powder, flour, baking powder, and vanilla.
- Cream together the butter and powdered sugar until light and fluffy.
- Beat in the egg.
- Gradually add the dry ingredients (flour mixture) and milk, mixing until just combined.
- Using a spoon or piping bag, drop the batter onto a baking sheet in small, round mounds.
- Bake in a preheated oven at 180°C (350°F) for 10-12 minutes. While the cookies are cooling, prepare the filling.
- Beat the heavy cream and powdered sugar until stiff peaks form.
- Pipe or spread the cream onto one cookie and top with another. Dust with powdered sugar, if desired.
