Homemade Tarkhun with sparkling water

This recipe offers a refreshing twist on the classic tarkhun beverage. Tarkhun (tarragon), a fragrant herb, gives this homemade soda a unique and distinctive flavor.

Ingredients:

  • 500 ml purified water
  • 100 g tarragon (fresh)
  • 300 g sugar
  • 1 lemon
  • Sparkling water to taste

Instructions:

  1. Make the sugar syrup: Boil a cup of water. Add a cup of sugar and stir. Simmer for 10-15 minutes until a concentrated syrup forms.
  2. Prepare the tarragon: Finely chop the tarragon stems and leaves. Place them in a pot and pour the hot sugar syrup over them. Let it sit for 3-5 hours at room temperature, covered.  
  3. Strain and flavor: Strain the mixture to remove the tarragon. Add the juice of one lemon to the clear liquid. Dilute the drink to your taste with sparkling water.
  4. Serve: Serve in tall glasses, garnished with tarragon leaves and slices of caramelized lemon.
  5. To caramelize lemon slices: Place lemon slices on a dry skillet and sprinkle with sugar. Cook on both sides until caramelized.
