Homemade Harissa: Spicy Pepper Paste

While you can certainly find ready-made harissa at the grocery store, trust us – homemade is infinitely more delicious! This recipe beautifully balances the sweetness of bell peppers with the fiery kick of chili, resulting in a rich yet well-rounded flavor. You have complete control over the heat level; just taste as you go to find your perfect spice balance.

Ingredients:

  • Red Chili Peppers: 3 medium-sized (adjust to your preferred heat – start with fewer if you’re sensitive to spice!)
  • Red Bell Peppers: 2 large
  • Tomato Paste: 2 tablespoons
  • Garlic Cloves: 5, peeled
  • Ground Coriander: 1 teaspoon
  • Ground Cumin (Jeera): 2 teaspoons
  • Smoked Paprika: ½ teaspoon (adds a lovely smoky depth!)
  • Sweet Paprika: 1 teaspoon
  • Cayenne Pepper: ½ teaspoon (optional, for extra heat)
  • Lemon Juice: From 1 fresh lemon
  • Salt: To taste
  • Olive Oil: 50 ml (about 3-4 tablespoons), plus a little extra for drizzling on top for storage

Preparation:

This recipe transforms simple ingredients into a gourmet condiment.

  1. Preheat Your Oven: Set your oven to 200°C (400°F). Use the top and bottom heat setting, if available, without the fan.
  2. Prepare the Peppers: Carefully slice the chili peppers and bell peppers in half lengthwise. Remove all the seeds and stems. Arrange them on a baking sheet lined with parchment paper, skin-side up.
  3. Roast for Flavor: Roast the peppers in the preheated oven until their skins are slightly blackened and blistered (this usually takes about 15-20 minutes). Those lovely charred spots are exactly what you want – they’ll infuse your harissa with a wonderful smoky aroma.
  4. Steam and Peel: Once roasted, immediately transfer the hot peppers to a plastic bag. Tie the bag shut and let them steam for about 10 minutes.   5. Blend to Perfection: Transfer the roasted and peeled peppers (both chili and bell peppers) to the bowl of a blender or food processor. Add the tomato paste, all the spices (coriander, cumin, smoked paprika, sweet paprika, cayenne if using), garlic, lemon juice, salt, and half of the olive oil (the 50ml portion).
    • Blend until you have a smooth, homogeneous paste. If you prefer a looser, softer consistency, you can gradually add a little more olive oil as you blend.
  6. Taste and Adjust: Now for the fun part – taste your harissa! This is your chance to adjust the seasonings. You might want to add a bit more salt, a squeeze more lemon juice, or an extra pinch of your favorite spice to perfectly suit your palate.
  7. Store It Safely: Spoon your freshly made harissa into a clean, sterilized jar. To help preserve it and keep it fresh, pour a thin layer of olive oil over the top of the paste – this creates a protective seal.
  8. Refrigerate: Store your homemade harissa in the refrigerator. It should keep well for 1-2 weeks.
